2½ cups flour
1 tsp baking soda
½ tsp kosher salt
½ tsp ground cinnamon
2 cups peeled and diced apples
1½ cups brown sugar
1 cup buttermilk (no buttermilk?)
½ cup vegetable oil
1 tsp vanilla extract
¼ cup flour
¼ cup brown sugar
Pinch ground cinnamon
2 tbsp melted butter
1) Coat 8 (3½-inch) mason jars with non-stick cooking spray. Set aside.
2) In a large bowl, combine flour, baking soda, salt, cinnamon and apples. Stir to combine ingredients. In a medium bowl, whisk brown sugar, buttermilk, vegetable oil, egg and vanilla extract. Gently stir into flour mixture until just combined. Spoon ½ cup batter into each prepared mason jar.
3) For the topping, in a small bowl, mix together flour, brown sugar and cinnamon. Add melted butter, stirring until mixture resembles coarse crumbs. Divide crumb mixture over muffin jars. At this point the muffins can be covered and refrigerated until ready to cook and serve.
4) Place one jar at a time in the microwave and cook for 1½ minutes on high heat. Carefully remove jar from microwave and let set for 3 minutes before eating.
