HAPPY PLANET's Thai Chicken Bowl
This one-step, one-pot and healthy meal-in-a-bowl is a scrumptious and simple recipe that will transform the harried pre-dinner witching hour (“We’re hungry!”) into a happy hour (thanks to Happy Planet) in less than 30 minutes.

2 tbsp vegetable oil
1 medium yellow onion, halved and thinly sliced
1 large carrot, peeled and sliced on the diagonal
1 tsp kosher salt
1 cup jasmine rice, rinsed and drained
2 ¾ cups Happy Planet fresh, all-natural gluten-free Thai Chicken Soup
1 cup vegetable broth
1 large zucchini, cut into ½-inch thick slices
Fresh cilantro, for garnish
1) In a large skillet, heat oil over medium-high heat. Add onion and sauté for 2-3 minutes until softened. Add carrots and salt, cooking for 2 minutes. Stir in rice until well coated. Add Happy Planet fresh Thai Chicken Soup and vegetable broth and bring to a boil. Reduce heat to low, stir in zucchini and simmer covered for 18 minutes, until rice is tender. Remove from heat and garnish with cilantro.
