PURE LEAF Lemon Loaf Recipe

Ingredients

Lemon Loaf

1 cup sugar
½ cup vegetable oil
½ cup PURE LEAF Lemon Iced Tea
2 eggs
1½ cups flour
1 tsp baking powder
½ tsp kosher salt
Zest of 1 lemon

Lemon Icing

1 cup icing sugar
1 tbsp fresh lemon juice

Directions

1) Preheat oven to 350ºF. Coat a 9x5-inch loaf pan with non-stick cooking spray.

2) In a large bowl, whisk sugar, vegetable oil and Pure Leaf Tea. Whisk in eggs, incorporating well. Add flour, baking powder, salt and lemon zest. Gently stir just until flour disappears, making sure not to over-mix. Pour into prepared loaf pan and bake for 40-45 minutes, until golden around the edges and just cooked through. Remove from oven and let cool completely before covering with lemon icing.

3) For the icing, in a small bowl, stir together icing sugar and lemon juice until smooth. Spread evenly over cooled lemon loaf.

Yield: 12-14 slices
