2 mangoes, peeled and diced
1 cup diced red bell pepper
2 tbsp fresh lime juice
2 tbsp olive oil
1 tsp jalapeno pepper, seeds removed, finely minced
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1) In a medium bowl, combine mango, red pepper, lime juice, olive oil, jalapeno pepper, salt and pepper. Gently fold together with a rubber spatula, letting the mixture sit at room temperature for at least 30 minutes.
