Dempster's Savoury Spinach & Onion Bread Pudding

Bread pudding may be one of our favourite desserts, but we couldn't resist reinventing it into a savoury main course when we got our hands on Dempster's new Honey Wheat bread. We broke each slice into cubes, soaked them in a cheesy egg mixture and smothered them in spinach and onions to create this easy-to-prepare crowd-pleaser that serves up bite after bite of cheesy goodness. And if you're lucky enough to have leftovers, they make the perfect lunchbox solution for the next day. Sounds like we've got ourselves a breadwinner!

Bite Me Bit

2 tbsp butter
2 large yellow onions, sliced in half and thinly sliced
1 tsp sugar
1 large garlic clove, minced
¼ cup dry white wine
½ tsp kosher salt
¼ tsp freshly ground black pepper
2 (300g or 10oz) packages frozen chopped spinach, thawed, drained and squeezed well
6 eggs
3 cups whole milk
½ tsp kosher salt
¼ tsp freshly ground black pepper
12 cups (1-inch cubed) Dempsters Honey Wheat Bread
2 cups grated sharp white cheddar cheese, divided
1 ½ cups grated Swiss cheese, divided
1 cup freshly grated Parmesan cheese, divided


1) In a large skillet, melt butter over medium-high heat. Add onions and sugar, stirring until they begin to brown, about 10-12 minutes. Stir in garlic and cook 1 minute more. Add white wine and continue stirring until the wine has evaporated, about 1 minute. Season with ½ teaspoon salt and ¼ teaspoon pepper. Stir in spinach and set aside to cool.

2) In a medium bowl, whisk eggs, milk, ½ teaspoon salt and ¼ teaspoon pepper. Set aside.

3) Coat a 13x9-inch baking dish with non-stick cooking spray. Spread half the bread cubes over the base. Top with half the spinach and onion mixture, 1 cup white cheddar cheese, 1 cup Swiss cheese and ½ cup Parmesan cheese. Scatter remaining bread over the cheese and top with remaining spinach and onion mixture. Pour egg mixture evenly over top and finish with the remaining white cheddar cheese, Swiss cheese and Parmesan cheese.

4) If baking right away, let stand for 30 minutes before baking or cover and refrigerate overnight. Bake in a preheated 350ºF oven for 45 minutes until golden and set. Let sit for 5 minutes before serving.
