Campbell’s Mac & Cheese Bites

Bite Me Bit

Ingredients

Cracker Crust
1½ cups cracker crumbs
3 tbsp freshly grated Parmesan cheese
7 tbsp melted butter

Mac & Cheese
1 can (284ml) Campbell’s Condensed Cream of Bacon Soup
¾ cup milk
1 tsp Dijon mustard
1 cup shredded sharp cheddar cheese
1 tbsp chopped fresh flat-leaf parsley
½ tsp dried thyme
3 cups cooked elbow-shaped pasta (about 1 ½ cups dried)

Topping
¼ cup cracker crumbs
2 tbsp freshly grated Parmesan cheese
2 tbsp melted butter

Directions

1) Preheat oven to 350ºF. Coat 14 muffin cups with non-stick cooking spray. To prepare the crust, in a medium bowl, stir cracker crumbs and Parmesan cheese together. Add melted butter until well combined. Divide mixture among 14 muffin cups, about 2 tablespoons per cup. Press into the bottoms and up the sides of each muffin cup. Set aside.
2) To prepare the mac & cheese, in a medium saucepan, combine Campbell’s Condensed Cream of Bacon Soup, milk and Dijon mustard. Heat to a gentle boil. Remove from heat and stir in cheese, parsley and thyme. Stir until cheese is melted and add cooked pasta. Fill muffin cups with macaroni and cheese mixture.
3) For the topping, in a small bowl, stir together cracker crumbs, Parmesan cheese and melted butter until well combined. Sprinkle over mac & cheese cups. Bake in preheated oven for 20-25 minutes, until the tops are golden. Let cool slightly for easier removal from the muffin tin.
