PEANUT BUTTER, CHOCOLATE & CHIA ENERGY BITES
These delicious bites have all the chocolatey, peanut butter goodness that you need to make them both healthy and holy-moly gobsmacking good.

1 ¼ cups large flake oats
½ cup peanut butter
½ cup milk or dark chocolate chips
2 tbsp chia seeds
1/3 cup honey
1 tsp vanilla extract
Pinch kosher sal
1) Combine all ingredients in a large bowl, mixing until well incorporated. Place in refrigerator for 30 minutes to chill.
2.) Line a plate or baking sheet with parchment paper. Using clean hands (and if after rolling a few the balls aren’t sticking together, clean hands again), roll approximately 2 tbsp of mixture into a ball. Place on parchment, and continue until all of mixture is used. Place in refrigerator for at least another 30 minutes to harden the bites. Transfer to sealed container and store refrigerated for up to 7 days.
