TRAIL MIX & FLAX ENERGY BITES

If you love trail mix, wait 'til you get your hands on these balls of goodness. Flax seeds, trail mix, chocolate chips, and peanut butter are rolled into a bite-sized and addictive energy bite, how can you say no?

Bite Me Bit

Ingredients

1¼ cups large flake oats
½ cup peanut butter
¼ cup milk or dark chocolate chips
3 tbsp chopped peanuts
3 tbsp raisins
1 tbsp flax seed
1/3 cup maple syrup
1 tsp vanilla extract
Pinch kosher salt

Directions

1. Combine all ingredients in a large bowl, mixing until well incorporated. Place in refrigerator for 30 minutes to chill.
2. Line a plate or baking sheet with parchment paper. Using clean hands (and if after rolling a few the balls aren’t sticking together, clean hands again), roll approximately 2 tbsp of mixture into a ball. Place on parchment, and continue until all of mixture is used. Place in refrigerator for at least another 30 minutes to harden the bites. Transfer to sealed container and store refrigerated for up to 7 days.
