Take your cobs to the next level with these killer corn toppings.
How to grill your corn:
Preheat a greased grill to medium-high. Grill husked corn, turning often, until deep yellow, with a few charred spots, about 10 minutes.
1. MEXICAN FIESTA
Combine 1/2 cup sour cream (or Mexican crema) with 1/4 cup crumbled Feta (or cojita cheese), 1/2 tsp chili powder, 1/4 cup chopped fresh cilantro. Brush on warm corn. Garnish with zested lime and kosher salt.
2. DOUBLE BBQ
Combine 1/2 cup barbecue sauce with 1 tbsp brown sugar, 2 tsp cumin, 1 tsp smoked paprika. Brush on warm corn. Garnish with crumbled BBQ chips.
3. BAC 'n CHEESE
Brush mayonnaise on warm corn and roll in a mixture of grated cheddar cheese and cooked crumbled bacon.
4. GARLIC PARM
Combine 1/4 cup mayonnaise, 1/2 tsp Italian seasoning and 1/4 tsp grated garlic. Brush on warm corn and roll in a mixture of 1/4 cup freshly grated Parmesan cheese and 1/4 panko crumbs. Garnish with chopped flat-leaf parsley.
5. SPICY ASIAN
Combine 1/2 cup hoisin sauce, 2 tbsp honey, 1 tbsp reduced sodium soy sauce, 1 tbsp fresh lime juice. Brush on warm corn. Drizzle with Sriracha sauce and garnish with chopped scallions and sesame seeds.
6. TROPICAL PARADISE
Combine 1/2 cup mayonnaise with 3/4 tsp allspice, 1/2 tsp dried thyme, 1/2 tsp cinnamon, 1/2 tsp kosher salt, 1/2 tsp freshly ground black pepper, 1/4 tsp cayenne and 1/4 tsp ground nutmeg. Brush on warm corn. Roll cobs in toasted coconut.
