BREAKFAST RECIPE – Easy Orange Mascarpone Crêpes

The French were really onto something when they created the infamous crêpe because who doesn`t love dessert for breakfast? Our dreamy version is filled with creamy orange mascarpone and topped with a warm mixed berry sauce. Now how`s that for morning decadence?

Ingredients:

Mixed Berry Sauce
2 cups mixed fresh or frozen berries (raspberries, blueberries and/or strawberries), quartered
3 tbsp sugar
1 tsp cornstarch
1 tsp fresh orange juice
½ cup fresh blueberries

Mascarpone Filling
1 cup Tre Stelle Mascarpone
1 cup heavy cream
2 tbsp sugar
1 tbsp fresh orange juice
½ tsp vanilla extract
2 tsp orange zest

Crêpes
1¼ cups whole milk
2 tbsp sugar
1 cup flour
2 eggs
1 tbsp vegetable oil
1 tsp vanilla extract
Pinch kosher salt
Butter, for skillet

Directions:

1) For the berry sauce, in a small bowl, toss mixed berries with sugar and cornstarch. Pour mixture into a small saucepan and place over medium heat. Stir until sugar melts, lower heat to a gentle simmer and cook for 5 minutes. Remove from heat and stir in orange juice and remaining ½ cup blueberries. Set aside to cool slightly.

2) For the filling, using an electric mixer, combine the mascarpone, cream, sugar, orange juice and vanilla extract. Whip until the mixture has soft peaks. Fold in orange zest and set aside until ready to assemble.

3) For the crêpes, in a blender, combine milk, sugar, flour, eggs, vegetable oil, vanilla and salt. Blend on medium speed for 2 minutes, until mixture is smooth. Heat a crêpe pan or a small skillet with low sides over medium heat. Generously grease pan with butter. Pour in ¼ cup crepe batter, swirl in the pan to spread evenly and cook about 30 seconds per side, until the edges just start to become golden. Transfer crepe to a plate and cover with a clean dishtowel to keep warm. Repeat with remaining crêpe batter. Grease pan with more butter after making 2 or 3 crêpes. Pile cooked crêpes on top of each other.

4) To assemble, lay a crêpe flat, top with orange mascarpone filling, fold the crepe in half and then in half again. Top with mixed berry sauce. More

Three Cheese Macaroni and Cheese Recipe

We`re all for following food trends and applauding culinary innovation. However, we`re sick and tired of blue cheese, bacon, tomatoes and truffles messing with mac and cheese. For us, "gourmet" and "comfort food" don`t belong in the same breath, let alone bite. Here, our mac and cheese lets the cheese do the talking, the creamy goodness of melted Gruyere, white cheddar and Velveeta nestled beneath a crunchy golden crust speaks volumes. This homemade classic of cheesy and buttery simplicity will take you on a welcome trip down memory lane, ketchup bottle in tow. More

Fudgy Chocolate Bread with Chocolate Coffee Glaze

Lisa a self-professed chocaholic. When she was little, she buried a chocolate bar in the backyard, hoping to grow a cacao tree. Now that she`s older, a bit crankier and short one chocolate forest, I do drive-by bonbons, pegging bars at her and running. And, well, since she`s not a morning person (she might dispute this, but take my word), I`m thrilled she created this decadent and dense chocolate loaf cake that undoubtedly lifts her spirits sky high. With a 1-2 chocolate punch, this coffee-glazed bread will leave you with a sweet chocolate high...one slice and Lisa`s euphoric.  More

Bubby`s Cherry Cake Recipe

Lisa delivered big-time on this scrumptious Cherry Cake. Bubby Anne, our late grandmother, was a dynamo, often cooking for her 23 grandchildren. The instant her Cherry Cake showed up, elbows flew and punches were thrown in efforts to get a piece of the cinnamon sugar-topped cake. A traditional Bubby, she fed us, remembered our birthdays and didn`t write down a single recipe. When she was gone, so was her Cherry Cake, or so we thought. Cousins, aunts and uncles...it`s time to rejoice because Lisa, with her bionic sense of taste, smell and gastronomical recall, has unlocked the secret and taken us back to the delectable days of Cherry Cake combat.  More

Easy Pavlova with Berries & Cream

Don`t tell us to "go big or go home." We`ll do both, as we did with this dramatic dessert, a Berry and Cream Pavlova. We took the traditional, measly, single-layered pavlova and turned it into a meringue masterpiece. All that, and we did it at home. Egg Whites were beaten stiff crisp-on-the-inside, soft-on-the-inside shells were baked and cream was whipped, resulting in stacked layers of airy, marshmallow-like meringue, mounded with sweet clouds of cream and fresh berries.  More

Blintz Souffle with Sweet Strawberry Sauce Recipe

The Eastern European cousin of the crepe, a blintz is a thin pastry wrapped around a filling. As much as we love them, we also love not spending all our time rolling, folding and frying each individual blintz. Instead, we’re doing blintzes freeform. We’ve transformed a 13x9-inch baking dish into one giant, creamy, sweet-cheese-filled blintz. All of the flavor and none of the labor, this puffy and golden soufflé is served topped with sweet strawberry sauce. More
