4 Delicious Ways to Use Rotisserie Chicken


With 6 kids between us (and that doesn`t include our hungry husbands), we`re all about taking shortcuts in the kitchen! Our favourite way to cut our cooking time? It`s none other than using rotisserie chicken from the local grocery store. The recipes are endless with this bird but here are our favourites: Chicken Rice Bowl, Vegetable & Chicken Stir Fry, BBQ Chicken Nachos, and Grilled Cheese.

Ingredients:

Creamy Salsa Dressing
½ cup sour cream
½ cup salsa
¼ cup mayonnaise
1(127mL/4.3oz) can chopped green chili peppers
1 lime, juiced
1 tbsp sugar
½ tsp ground cumin
¼ tsp ground chili powder

Rice and Beans
2 cups long grain rice, rinsed and drained
4 cups chicken broth
1 tsp ground cumin
½ tsp chili powder
½ tsp kosher salt
1 cup canned black beans, rinsed and drained
1 tbsp fresh lime juice
2 tbsp chopped fresh flat-leaf parsley

Toppings
3 deli-roasted chicken breasts, shredded
2 cups chopped romaine lettuce
1½ cups halved cherry tomatoes
1½ cups shredded Monterey Jack cheese
1 cup sweet corn kernels, fresh or frozen (thawed)
1 large ripe avocado, sliced

Nacho chips, for garnish
Lime wedges, for garnish

Directions:

1) To prepare the dressing, in a medium bowl, whisk sour cream, salsa, mayonnaise, chopped green chilies, lime juice, sugar, cumin and chili powder until well combined. Cover and refrigerate until ready to use.
2) For the rice, in a large saucepan, combine rice, chicken broth, cumin, chili powder and salt. Bring to a boil, reduce heat to low and stir in black beans. Cover and simmer for 15 minutes, until the rice is tender. Remove from heat and let sit covered for 5 minutes. Stir in lime juice and chopped parsley. Set aside until ready to assemble bowls.
3) To assemble, divide rice between 4 serving bowls. Top with shredded chicken, chopped lettuce, tomatoes, shredded cheese, corn and avocado. Drizzle dressing over and garnish with nacho chips and lime wedges.

EASY APPETIZER RECIPE – Chicken Satay Skewers


Get the party started with Lisa`s Michelin-worthy Chicken Satay Skewers and a dipping sauce so good that you`ll want to double-dip!

Ingredients:

Marinade
2 tbsp olive oil
2 garlic cloves
1 large shallot, peeled
2 slices fresh ginger
1 tbsp brown sugar
1 tsp ground cumin
1 tsp ground coriander
1 tsp lemongrass paste
½ tsp turmeric powder
½ tsp kosher salt

4 boneless chicken breast halves, cut into long strips
Bamboo skewers, soaked in water for 30 minutes

Satay Peanut Sauce
¾ cup smooth peanut butter
1/3 cup water
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp red curry paste
2 tsp freshly grated ginger
2 tsp honey
1 small garlic clove

Roasted peanuts, for garnish

Directions:

1) For the marinade, using a blender, combine olive oil, garlic, shallot, ginger, brown sugar, cumin, coriander, lemongrass paste, turmeric and salt. Pulse to combine all ingredients. Marinate chicken for a few hours or overnight in the refrigerator. Before cooking, remove the chicken and let come to room temperature. Thread chicken strips on the skewers and discard any remaining marinade.
2) Preheat a lightly oiled grill to medium-high heat. Grill skewers for 10–12 minutes, until juices run clear and chicken is cooked through. Turn skewers halfway through cooking.
3) To prepare satay peanut sauce, using a blender, combine peanut butter, water, soy sauce, rice vinegar, red curry paste, ginger, honey and garlic until smooth. Serve skewers with peanut sauce and garnish with roasted peanuts.

EASY DINNER HACK - Zesty Chicken and Rice Skillet Recipe


This Zesty Chicken and Rice Skillet recipe has everything you need for a delicious weeknight dinner! It`s super quick and easy and it beats calling the pizza guy. So pick up a can of Campbell`s Condensed Roasted Red Pepper and Tomato Soup and get ready to get cooking.

Ingredients:

2 tsp (10 mL) canola oil
4 (about 1 lb/ 454 g) boneless, skinless chicken breast
3 cloves garlic, minced
1 can (284 mL) Campbell`s® Condensed Roasted Red Pepper & Tomato Soup
1 3/4 cups (435 mL) water
2 tsp (10 mL) lemon juice
1/2 tsp (3 mL) black pepper (optional)
1/4 tsp (1 mL) dried Italian seasoning
3/4 cup (185 mL) long grain white rice or brown rice (8- to10-minute quick-cooking variety)
3 cups (750 mL) fresh baby spinach
2 cups (500 mL) grape or cherry tomatoes, halved

Directions:

1) Heat oil in large nonstick skillet over medium-high heat. Cook chicken 4 minutes per side until cooked through. Transfer to a plate and keep warm. Reduce the heat to medium-low.
2) Stir in garlic cook, stirring, 30 seconds until fragrant.
3) Stir in soup, water, lemon juice, pepper (optional) and Italian seasoning bring to a simmer, stirring often.
4) Stir in rice. Simmer, covered, stirring occasionally for 10 minutes.
5) Top with spinach and half of the tomatoes. Cook, covered, stirring occasionally for 5 minutes until spinach is wilted and rice is tender. Remove from heat let stand, covered, for 2 minutes, until liquid is absorbed.
6) Top rice mixture with chicken and sprinkle with remaining tomatoes.

How to Make 15 Minute Chicken Parmesan


Julie is flying solo in the kitchen in our latest video. Fear not! She`s sharing an easy weeknight recipe that you can whip up in no time. This 15-minute Chicken Parmesan is foolproof, juicy and delicious. Your family will love it and it won`t take hours to prepare!

Ingredients:

2 cup flour
2 large eggs, lightly beaten
1 cup panko (Japanese breadcrumbs)
1 cup freshly grated Parmesan cheese
6 boneless, skinless chicken breast halves
3 tbsp olive oil
2 cups chicken broth
1 cup tomato sauce
1/2 cup shredded mozzarella cheese
1/2 cup freshly grated Parmesan cheese

Directions:

1) Place flour in a small bowl. In another bowl, lightly beat eggs. In a third bowl, combine panko and Parmesan cheese.
2) Place chicken between two sheets of wax paper and pound to even thickness, about 1/2-inch thick. Lightly coat chicken in flour mixture, shaking off excess. Dip into beaten eggs and then transfer to panko mixture, patting the crumbs on both sides.
3) In a large skillet, heat oil over medium-high heat. Add chicken and sauté until lightly browned, about 3 minutes per side. Reduce heat to low. Add chicken broth to pan, spread 3 tbsp tomato sauce on each chicken breast and sprinkle with mozzarella and Parmesan.
4) Cover skillet and simmer until chicken is cooked through, about 6 minutes.
