CAPRESE SALAD 2 WAYS


The epitome of Italian gastronomy is the Caprese Salad. This simple dish requires minimum execution time yet packs maximum flavour – Julie`s favourite kind of recipe! And because Lisa is an overachiever, she`s come up with two delicious versions: a Terrific-Two Caprese Salad and a Caprese Orzo Salad.

1. TWO-TOMATO CAPRESE SALAD

Ingredients:

Roasted Tomatoes
6 plum tomatoes, halved and seeded
1 tbsp olive oil
2 tsp balsamic vinegar
¼ tsp kosher salt
¼ tsp freshly ground black pepper

Caprese Salad
6 large vine-ripened tomatoes, each cut into 3 slices
3 fresh buffalo mozzarella rounds, each cut into 4 slices
¼ cup fresh basil, cut into long thin strips
6 tbsp olive oil
6 tsp good quality balsamic vinegar
¾ tsp kosher salt
¾ tsp freshly ground black pepper

Directions:

1) Preheat oven to 275°F. Line a baking sheet with aluminum foil and coat with non-stick cooking spray.
2) For the roasted tomatoes, lay cut side up on prepared baking sheet. Drizzle evenly with olive oil and balsamic vinegar. Sprinkle with salt and pepper. Place in oven and let them slow roast for 2 hours. Allow to cool before stacking in Caprese salad. These can be made ahead and refrigerated in a sealed container for up to 1 week.
3) To assemble the salad, arrange 1 fresh tomato slice on a serving platter. Top with a slice of mozzarella followed by 1 roasted tomato, 1 tsp basil, another fresh tomato slice, mozzarella, roasted tomato, basil and the final fresh tomato slice. Drizzle with 1 tbsp olive oil and 1 tsp balsamic vinegar. Sprinkle with 1/8 tsp salt and 1/8 tsp pepper. Repeat with remaining tomatoes. Serve immediately.

Serves 6

2. CAPRESE ORZO SALAD

Ingredients:

2 cups cherry tomatoes, halved
2 cups pearl (bite-sized balls) bocconcini cheese
¼ cup olive oil
¼ cup chopped fresh basil
1 small garlic clove, minced
1½ tsp kosher salt
¼ tsp freshly ground black pepper
1½ cups orzo
2 tbsp olive oil

Directions:

1) In a medium bowl, gently stir together tomatoes, bocconcini, olive oil, basil, garlic, salt and pepper. Let stand at room temperature for 1 hour, allowing flavors to blend.
2) For the orzo, in a medium pot, bring water to a boil over high heat. Add the pasta and cook until tender. Drain well and place in a large bowl, allowing to cool for 20 minutes.
3) Add remaining 2 tbsp olive oil and tomato mixture to orzo, tossing to coat.

EASY HEALTHY LUNCH - Mason Jar Salad Recipe


Lunch is too short for a sad salad! We`re changing the way we look at greens with our Mason Jar Salad. Our recipe is super easy, delicious, and customizable.

Ingredients:

Maple Shallot Dressing
6 tbsp olive oil
3 tbsp fresh lemon juice
2 tbsp maple syrup
2 tsp chopped shallots
2 tsp Dijon mustard
1 tsp chopped fresh thyme
¼ tsp kosher salt

Kale & Fennel Salad
2 cups thinly sliced fennel bulb
1 Granny Smith apple, sliced
1/3 cup dried cranberries
1/3 cup chopped pitted dates
½ cup toasted pecan halves, roughly chopped
8 cups baby kale, coarsely chopped

Directions:

1) For the dressing, in a small bowl, whisk olive oil, lemon juice, maple syrup, shallots, Dijon mustard, thyme and salt.
2) To assemble the Mason jar salad, distribute dressing evenly between 4 Mason jars. Layer sliced fennel, apples, cranberries, dates, pecans and baby kale in each jar.
3) Cover with top and refrigerate until ready to serve. Shake and eat.

KALE & BERRY SALAD WITH CINNAMON TOAST CROUTONS BREAKFAST SALAD

Ingredients:

Cinnamon Toast Croutons
3 cups cubed, day-old bread
3 tbsp melted butter
2 tbsp sugar
½ tsp ground cinnamon
Pinch kosher salt

Zesty Citrus Dressing
3 tbsp orange juice
2 tbsp olive oil
1 tbsp fresh lime juice
1 tbsp honey
Pinch kosher salt

Salad
8 cups baby kale
1½ cups strawberries, hulled and sliced
1½ cups blueberries
1 cup blackberries
¼ cup chopped roasted almonds

Directions:

1) For the croutons, preheat oven to 400ºF. Line a baking sheet with parchment paper. In a bowl, toss bread cubes with melted butter, sugar, cinnamon and salt. Place on baking sheet and bake 10 minutes, stirring once halfway through cooking.
2) For the dressing, whisk orange juice, olive oil, lime juice, honey and a pinch of salt.
3) For the salad, in a large serving bowl, toss kale, strawberries, blueberries, blackberries, almonds and cinnamon toast croutons with orange dressing.

BAGEL & LOX BREAKFAST SALAD

Ingredients:

Lemon Dressing
¼ cup olive oil
2 tbsp fresh lemon juice
2 tsp honey
¼ tsp lemon zest
¼ tsp kosher salt

Salad
8 cups chopped romaine lettuce
2 cups cherry tomatoes, halved
1½ cups sliced cucumber
6 oz smoked salmon, sliced
4 hard boiled eggs, halved
1 tbsp capers, drained
1 tbsp chopped fresh dill

Bagel crisps, for garnish

Directions:

1) For the dressing, whisk olive oil, lemon juice, honey, lemon zest and salt. Set aside.
2) To assemble the salad, place lettuce in a large serving bowl. Add tomatoes, cucumbers, smoked salmon, eggs, capers and dill. Drizzle dressing over top and garnish each serving with bagel crisps. Serve with more dressing if desired.

EASY HEALTHY RECIPE – Cornbread Panzanella Salad


Who doesn`t want a salad that`s made out of bread especially when Lisa`s cornbread is involved? Watch as we transform this Tuscan classic into an A-MAIZE-ING side dish for your summer meals!

Ingredients:

Cornbread Croutons
1 Cup Flour
1 Cup Yellow Cornmeal
¼ Cup Sugar
1 tbsp baking powder
½ tsp kosher salt
¼ tsp cayenne pepper
1 cup buttermilk
¼ cup melted butter
¼ cup honey
2 eggs

Lime Dressing
¼ cup fresh lime juice
¼ cup olive oil
2 tbsp vegetable oil
2 tbsp chopped fresh flat-leaf parsley
1 tbsp honey
¼ tsp kosher salt
¼ tsp freshly ground black pepper

Salad
1 tbsp butter
3 ears fresh corn, kernels removed
¼ tsp paprika
¼ tsp kosher salt
¼ tsp freshly ground black pepper
8 cups chopped romaine lettuce
1 red bell pepper, chopped
1 yellow pepper, chopped
1 large ripe avocado, chopped
¼ cup chopped fresh basil
1 large jalapeno pepper, seeds removed, chopped, for garnish (optional)

Directions:

1. Preheat oven to 400°F. Line an 8-inch-square baking pan with parchment paper and coat lightly with non-stick cooking spray.
2. For the cornbread, in a large bowl, combine flour, cornmeal, sugar, baking powder, salt and cayenne pepper. In a medium bowl, whisk buttermilk, melted butter, honey and eggs until combined. Pour the wet ingredients into the flour mixture and gently mix ingredients together. Do not overmix. Pour batter into prepared pan and bake for 18–20 minutes, until the edges are golden and a toothpick inserted into the center comes out clean. Remove from oven and let cool before slicing into croutons.
3. Once the cornbread has cooled, lower oven temperature 350°F and line a baking sheet with parchment paper. Cut the cornbread into 1-inch cubes and place on parchment paper. Bake for 10 minutes, flip the cubes and continue baking for 10 minutes more. Remove from oven and let croutons cool completely before using them.
4. For the dressing, place lime juice, olive oil, vegetable oil, parsley, honey, salt and pepper in a container with a lid. Shake well to combine.
5. For the salad, in medium skillet, melt the butter over high heat, add corn, paprika, chili powder, salt and pepper. Cook 2–3 minutes, until corn is golden. Remove from heat and cool. Place the lettuce in a large serving bowl. Add red and yellow peppers, avocado, basil, sautéed corn and cornbread croutons. Gently toss with dressing to combine. Garnish with chopped jalapenos. Serve immediately.

Ingredients

1 lb asparagus, trimmed
1 small fennel bulb, cored and thinly sliced
2 Persian cucumbers, thinly sliced
4 large radishes, thinly sliced
2 celery stalks, thinly sliced
¼ cup chopped fresh mint
¼ cup chopped fresh flat-leaf Italian parsley

Lemon Vinaigrette
¼ olive oil
2 tbsp white wine vinegar
2 tbsp fresh lemon juice
1 tsp honey
½ tsp kosher salt
¼ tsp freshly ground black pepper

½ cup shaved Parmesan cheese
¼ cup toasted pistachios, coarsely chopped

Directions

1) Using a vegetable peeler, shave the asparagus into ribbons and place in a large bowl. Place the asparagus tips in with the shaved asparagus and add the fennel, cucumbers, radishes, celery, mint and parsley.
2) For the dressing, whisk olive oil, white wine vinegar, lemon juice, honey, salt and pepper. Toss together, place on a serving dish and sprinkle with shaved Parmesan and pistachios.

HEALTHY RECIPE - Roasted Vegetable Couscous Salad

Who doesn`t love couscous? A dish so nice, they named it twice! As if it couldn`t get any better, Lisa adds her own winter spin with roasted veggies, pomegranates, and cranberries. *drools uncontrollably*

INGREDIENTS

2 cups trimmed and halved Brussels sprouts
1 ½ cups peeled and cubed butternut squash
1 ½ cups peeled and cubed sweet potato
1 tbsp olive oil
1 tbsp maple syrup
¾ tsp kosher salt
1/3 tsp ground cinnamon

Couscous
1 ¾ cups Israeli (also known as pearl) couscous
3 cups vegetable or chicken

Maple Vinaigrette
¼ cup olive oil
2 tbsp white balsamic vinegar
2 tsp maple syrup
1 tsp Dijon mustard
¼ tsp kosher salt
¼ tsp freshly ground black pepper

¼ cup pomegranate seeds
¼ cup dried cranberries
½ cup roasted and salted almonds, coarsely chopped

DIRECTIONS

Preheat oven to 400°F and line a large baking sheet with parchment paper. In a large bowl, combine Brussels sprouts, butternut squash and sweet potatoes. Toss with olive oil, maple syrup, salt and cinnamon. Spread vegetable mixture on prepared baking sheet. Cook for 15-minutes, stir and cook for 10 minutes more, or until vegetables are just tender. Remove from oven and let cool slightly.

For the couscous, in a large saucepan, combine couscous and broth. Bring to a boil over high heat. Reduce heat to medium-low, cooking uncovered until couscous is tender. Strain excess liquid if necessary and set aside to cool.

For the dressing, in a small container, combine olive oil, white balsamic vinegar, maple syrup, Dijon mustard, salt and pepper. Shake well to combine.

To assemble salad, in a large bowl, combine roasted vegetables, couscous, pomegranate seeds and dried cranberries. Toss with dressing to coast well and top with roasted almonds. More

Lemon Dressing
¼ cup olive oil
2 tbsp fresh lemon juice
2 tsp honey
2 tsp Dijon mustard
1 tsp minced shallots
1 tsp lemon zest
¼ tsp kosher salt
¼ tsp freshly ground black pepper

Brussels Sprout Salad
4 cups finely shredded Brussels Sprouts (to shred sprouts, cut off the stems, halve them and cut into shreds)
4 cups thinly sliced kale
½ cup freshly grated Parmesan cheese
½ cup chopped roasted almonds

Directions:

1) For the dressing, in a jar combine olive oil, lemon juice, honey, Dijon mustard, minced shallots, lemon zest, salt and pepper. Shake well to combine and set aside.
2) To prepare the salad, combine shredded Brussels sprouts, sliced kale, Parmesan cheese and roasted almonds. Toss to coat with dressing, serve immediately.
