EASY DESSERT RECIPE - Gingerbread Whoopie Pies


The holidays are all about giving and this festive season we're giving you the ultimate dessert with our Gingerbread Whoopie Pies recipe. Not only do you get 2 soft and chewy cookies in each bite but you also get a luscious creamy cinnamon filling. Devour these before Santa does!

Ingredients:

Whoopie Pies
2½ cups flour
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp baking soda
½ tsp kosher salt
¼ tsp nutmeg
¾ cup butter
¾ cup brown sugar
¼ cup molasses
1 egg
1 tsp vanilla extract
3 tbsp finely chopped crystalized ginger

Cinnamon Filling
2 cups icing sugar
½ cup butter, room temperature
1 tbsp milk
½ tsp vanilla extract
½ tsp ground cinnamon

Directions:

1) In a medium bowl, combine flour, cinnamon, ginger, baking soda, salt and nutmeg. Set aside. Using an electric mixer, cream butter and brown sugar until light and fluffy. Mix in molasses, egg and vanilla extract until well combined. On low speed, add flour mixture and crystalized ginger. Mix just until flour disappears. Refrigerate dough for at least 1 hour.
2) Remove dough from refrigerator and preheat oven to 350ºF. Shape dough into 1½ tablespoon balls. Place on a parchment-lined baking sheet and bake for 9-10 minutes. Remove from oven and let cool completely before filling.
3) For the cinnamon filling, using an electric mixer, cream icing sugar, butter, milk, vanilla extract and cinnamon until fluffy. Assemble whoopee pies by spreading 1-2 tablespoons of filling on flat side of a cookie, then top with the flat side of a second cookie. Refrigerate until filling firms up slightly.
