EASY PASTA RECIPE – Gnocchi 3 Ways


We love hacking our way through life especially when it comes to making dinner. One of our favourite cooking cheats is using ready-made store bought pasta (c'mon you know you buy it too)! We love that most of the leg work is done and all that we're left with is customization. Check out how we transform grocery gnocchi into a gourmet Italian meal with a few easy steps!

ONE SKILLET GNOCCHI WITH CHICKEN

Ingredients:
1 tbsp olive oil
1 medium zucchini, chopped
¼ cup chopped sun-dried tomatoes
1 large garlic clove, minced
½ tsp Italian seasoning
¼ tsp red pepper flakes
¼ tsp kosher salt
¼ tsp freshly ground black pepper
2½ cups chicken broth
½ cup half and half cream
2 (300g) packages uncooked gnocchi
4 cups loosely packed baby spinach, roughly chopped
5 plum tomatoes, seeded and chopped
3 cups shredded rotisserie chicken
¾ cup freshly grated Parmesan cheese
¼ cup chopped fresh flat-leaf parsley

Directions:
1) Heat olive oil in a large skillet oven medium heat. Add zucchini and cook for 3 minutes until golden. Add sun-dried tomatoes, garlic, Italian seasoning, red pepper flakes, salt and pepper. Stir cooking for 2 minutes. Stir in chicken broth and half and half. Bring to a boil over medium heat. Stir in gnocchi and cook for 5 minutes, stirring occasionally. Turn heat to low and stir in spinach, chopped tomatoes, shredded chicken and Parmesan cheese. Cook for 2 minutes until heated through. Remove from heat and stir in parsley.
