HEALTHY RECIPE – Stuffed Avocados

Guac may be extra but have you ever seen Stuffed Avocados? This is what Millennials brunch dreams are made of. They're delicious, healthy and Instagram-worthy!



Chicken Salad
2 firm, ripe avocados, pitted
2 cups chopped rotisserie chicken
½ cup diced Granny Smith apple
½ cup seedless red grapes, halved
1 mango, peeled and diced
¼ cup chopped celery

Sweet Chutney Dressing
¼ cup mayonnaise
3 tbsp sour cream
2 tbsp mango chutney
1 tsp curry powder
1 tsp honey
1 tbsp fresh lime juice
½ tsp lime zest
Pinch kosher salt

¼ cup chopped roasted cashews


1) To prepare the avocados, if the pit is not large and does not create a bowl when removed, scoop out enough avocado flesh to create a bowl for your chicken salad to sit in.
2) In a mixing bowl combine chicken, apples, grapes, mango and celery.
3) In a separate bowl, for the dressing, stir mayonnaise, sour cream, chutney, curry powder, honey, lime juice, lime zest and salt.
4)Fold into chicken salad and divide among the avocado halves. Top each half with chopped cashews.

Makes 4 stuffed avocado halves
