The Best: Chocolate Chip Cookie Pizzas

The Pizza as we know it today has been around for more than a millennium, which shouldn't be surprising, because who doesn't love pizza!?! But across the blogosphere recently, there's been some major changes in the Pizza game. The possibilities of customizing a pizza have always been endless - so who said pizzas were restricted to being salty and savoury?

A pizza by the simplest of definitions can be described as a flat round base of dough topped with a variety of ingredients. These "new" pizza pies consist of a cookie dough crust, with a layer (or TWO!) of frosting and a variety of "toppings" and thus the world has been blessed with The Cookie Pizza! We'd like to bet that it's here to stay for the next millennium because it's quickly becoming a classic in simple and stress-free desserts!

Cookie Crust Recipe

1 egg
½ cup brown sugar
¼ cup white sugar
½ butter, softened
1 tsp vanilla extract
1 ¼ cups flour
½ tsp baking soda
¼ tsp kosher salt
¾ cup milk or semi-sweet chocolate chips


1) Preheat oven to 350ºF. Coat a 12-inch round pizza pan with non-stick cooking spray.

2) In a large bowl, using a wooden spoon, stir together eggs, brown sugar, white sugar, butter and vanilla until well mixed. Add flour, baking soda, salt and chocolate chips into the butter mixture. Stir until combined.

3) Pat the dough onto prepared pizza pan, taking it to the edge of the pan. Bake for 13-15 minutes, until crust is golden. Allow to cool for 10 minutes before topping with frosting.
1 cup butter
6 cups icing sugar
Pinch kosher salt
1 tbsp vanilla extract
4 tbsp whole milk

Using an electric mixer on low speed, combine butter, icing sugar, salt, vanilla and milk. Raise speed to medium and beat until icing sugar is incorporated and frosting is smooth.

1 cup butter, softened
8 oz unsweetened chocolate, melted and cooled
6 cups icing sugar
¾ cup whole milk

Using an electric mixer, beat butter, melted chocolate, icing sugar and milk on low speed. Gradually increase speed to medium until frosting is fluffy.
