Asian Cod Wrapped in Rice Paper Recipe

1½ tsp chopped fresh basil
¾ tsp kosher salt
½ tsp freshly ground black pepper

6 rice paper sheets

6 (6-8oz) cod fillets, 1-inch thick

Asian Sauce

1 tsp olive oil
2 shallots, finely chopped
1 large garlic clove, minced
6 tbsp soy sauce
¼ cup rice wine vinegar
1½ tsp sugar
1/8 tsp crushed red pepper flakes
2 tbsp olive oil


1) Preheat oven to 450°F.

2) In a small bowl, mix basil, salt and pepper. Set aside.

3) For the rice paper, fill a pie dish with warm water. Carefully submerge 1 piece of rice paper in water for 20 seconds, remove, lay on a dish towel and place 1 cod fillet in the center of the softened wrapper. Repeat with remaining 5 rice paper rounds and cod. Divide basil mixture among fillets. Fold the ends of the rice paper around the cod and enclose securely. Set aside.

4) For the sauce, in a small sauté pan, warm 1 tsp olive oil over low heat. Add shallots and garlic. Sauté until softened. Add soy sauce, rice wine vinegar, sugar and red pepper flakes, stirring for 1 minute. Remove from heat and set aside.

5) In a large ovenproof skillet, heat 2 tbsp olive oil over high heat. Add cod parcels and sear on both sides, 2 minutes per side. Place skillet in preheated oven for 5 minutes to finish cooking. Spoon sauce over each piece and serve.
