Chocolate Chunk Banana Coffee Cake
This Chocolate Chunk Banana Coffee Cake is the perfect collision between sweet bananas and rich chocolate. With a chunky chocolate cinnamon streusel layered between (and atop) moist banana sour cream cake, every bite is a winner.

1 1/2 cups coarsely chopped semisweet chocolate
1/2 cup brown sugar
1 tbsp cocoa powder
1 tsp ground cinnamon
1/2 cup butter, room temperature
3/4 cup sugar
1 tsp vanilla extract
1/4 cup sour cream
1/2 tsp baking soda
1 1/4 cups mashed ripe bananas (about 2 large)
1 1/2 cups flour
1 tsp baking powder
1/2 tsp kosher salt
1) Preheat oven to 350ºF. Coat an 8-inch square baking pan with non-stick cooking spray. Line the bottom of the pan with parchment paper for easier removal.
2) For the chocolate streusel, in a medium bowl, combine chocolate, brown sugar, cocoa powder and cinnamon until well blended. Set aside.
3) For the cake, using an electric mixer, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, mixing until well incorporate. In a small measuring cup, combine sour cream and baking soda. Allow mixture to sit for 1 minute and then add to mixer. On low speed, add mashed bananas, flour, baking powder and salt. Mix just until flour disappears.
4) Spread half the batter into prepared baking pan. Sprinkle with half the chocolate streusel. Cover with remaining batter and finish on top with remaining streusel. Bake 40-42 minutes, until springy to the touch.
